About the Recipe
Seed keto crackers are a nutritious, low-carb snack packed with healthy fats, fiber, and essential nutrients. They support digestion with their high fiber content, promote heart health through omega-3 fatty acids, and help maintain stable blood sugar levels. Rich in antioxidants, they also reduce inflammation and provide sustained energy, making them an excellent choice for a keto-friendly diet.

Ingredients
1/3 cup almond meal (or nut meal)
1/3 cup sunflower seeds
1/3 cup pepita seeds
1/3 cup flax seeds
1/3 cup chia seeds
1/3 cup sesame seeds
1 tbsp ground psyllium husk
1/4 cup melted coconut oil
1 cup boiling water
(optional - dried rosemary, thyme, salt)
Preparation
Preheat the oven to 150 degrees
Boil the water
Mix all the dry ingredients in a bowl.
Add the water and oil and mix together using a fork
Place a sheet of non-stick baking paper on a baking tray
Spread the mixture over the tray. Placing a second sheet over the top and rolling the mixture works well.
Optional - sprinkle with sea salt and herbs.
Place in the oven on a lower rack for about 45-60 minutes, check the crackers occasionally.
Turn the oven off and allow to dry in the oven for a further 5-10 minutes.
Place on a cooling rack - they should be firm to touch.
Once cooled - break into pieces.
